Breakfast time!
2 cups all-purpose flour
2 cups milk
1.5 tablespoons of sugar
2 eggs
2 tablespoons of butter (melted)
1/4 tsp. baking soda*
1/4 tsp. salt*
(*If using self-rising flour omit baking soda/salt)
Mix these ingredients in a bowl. Let sit for half an hour or so.
Butter or oil a 6 inch frying pan (or don't...this isn't completely necessary) and add 1/4 cup of mix. Shake/rotate pan and make sure the batter covers the entire pan with a very thin layer. Cook on medium heat. When it begins to bubble, flip it and cook other side. Do not brown. Stack crêpes between wax paper or something so they don't stick.
Now you have crêpes. To make them Crêpe Suzette....
Take the frying pan and add a little butter and orange juice. Let most of it boil away on medium heat. Add a crêpe and cover in sauce. REMOVE PAN FROM FLAME. Add some alcohol (preferably a liquer or brandy...make sure it is at least 80 proof) and return pan to flame. Tilt the pan so the liquid is on one end and keep tilting it until it is about to pour onto the flame. It will ignite. Let the flame burn out and put the crêpe on a plate. Pour the sauce over it. Repeat with remaining crêpes.
NOTE: If you have an electric stove, ignite alcohol with a kitchen match.
