We have recently encountered the following problem. The company who hosts this site lost most of our Avatars when they changed servers.  Banana Nut Bread Cake

  • 1 1/4 cups all purpose flour
  • 1 cup oatmeal or rolled oats, not instant
  • 1 1/2 cups raw sugar, washed
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 over ripe bananas mashed
  • 3/4 cup buttermilk
  • 1/2 cup canola oil
  • 2 tsp banana flavoring
  • 2 large brown eggs
  • 3/4 cup chopped macadamia nuts
  • 3/4 cup chocolate chips
  • Powder sugar
  • Vanilla custard yogurt

Method



Pre-heat oven to 350 degrees and grease an 11 x 7 glass baking dish. In large mixing bowl, stir flour, oatmeal, sugar, baking powder, baking soda and salt. With electric mixer, mix in bananas; milk, oil and flavoring, then beat on low speed till combined. Before adding eggs, one at a time, taste for flavor and adjust. After adding eggs, beat on medium speed for two minutes then stir in macadamia nuts and chocolate chips. Pour into prepared dish and bake at 350 degrees for 45-55 minutes or until toothpick inserted in middle comes out clean. Cool on rack. When completely cooled, sift powder sugar over entire cake. Serve each piece with a dollop of vanilla custard yogurt on top.
